Basic Salt Fermentation Reccipe

Fermenting food is a very simple process, nothing like canning or even pickling with vinegar. The fermenting process occurs naturally at room temperature and only requires salt to keep the ingredients from spoiling.

Here is a basic fermenting recipe. You can use it with lemons, limes, garlic cloves, and other food, limited only by your taste and imagination.


  • Items to be preserved (lemons, limes, garlic cloves, etc.) cut into segments or chunks if necessary
  • Sea salt
  • Water


  1. Put the chunks into an appropriate sized jar.
  2. Make a brine by combining adding 1-2 Tablespoons of sea salt to 2 cups of warm water, depending on how salty you like it.
  3. Add the brine until it is about one and a quarter inches from the top of the jar.
  4. Close the jar lid finger tight.
  5. Place the jar on a shelf at room temperature for at least a couple weeks. The longer it sits, the more fermented and healthier it becomes.
