Fermented Cauliflower

I just love fermented cauliflower. It's a great thing to make in cooler weather when cauliflower is in season. Enjoy!


  • 1 head of cauliflower
  • 2 cups or more filtered water ( non chlorinated)
  • 1-2 Tablespoons sea salt for each 2 cups of water to make a brine
  • Any additional seasonings, such as dill


  1. Add sea salt to the water to let it start dissolving.
  2. Break the cauliflower into florets and stuff into wide-mouth jars, leaving at least an inch at the top.
  3. Add the brine to the top of the cauliflower in each jar.
  4. Add any optional additional seasoning to the jars.
  5. Put lids on the jars and tighten loosely (finger tight).
  6. Let sit on counter for 5 to 10 days or to taste.


The longer you let it stand, the more the fermentation but the softer the cauliflower. In some cases, you can start to eat it in 3-5 days.

You can use this recipe with any hard vegetable.
